Menu Planning Monday



To me, one of the biggest perks of summer time are the abundance of fresh produce available! And living in a warmer area, it seems like the growing season lasts so long! We currently have a fridge full of green beans, broccoli, cabbage, zuchinni, yellow squash, and more -- all straight from a local farm. And you know what? 

Nothing tastes better than eating something you know is ridiculously fresh! 

Here's what's on our menu for the week:

Monday: Tender Eye of Round Roast with Fingerling Potatoes and Asparagus [we didn't eat this last week]
Tuesday: Pork Carnitas Tacos with corn salsa
Wednesday: Grilled Catfish with onion and bell pepper
Thursday:  Crockpot Chicken Satay
Friday: Pork BBQ Sandwichs [from leftover pork carnitas]
Saturday: Goat Cheese Mac and Cheese {a la Michael Symon}
Sunday: Grilled Turkey Breast and corn with Cheese and Lime
