Menu Planning Monday





It has been so nice to be cooking all of our meals at home lately. I can count on one hand how many times we've eaten outside of the house in the past couple of weeks. Nothing at all for breakfast. Last Friday, I got the kids some Happy Meals on our way home from the park as a special treat -- and let me just say, they thought it was such a treat because it hasn't happened in awhile, that S ate all of her nuggets, all of her fries, and drank all of her milk. And she shared her apples with L.

L, being the minor meat eater that he is, nibbled on the nuggets and the fries, until I gave him some ketchup. But boy, did he inhale some apples. More than his fair share, easily.

And dinner has been at home since that awful restaurant meltdown of epic proportions two weeks ago, too. A night here or there at friends' houses for cook outs, but it was still home cooked food. That is making me so happy right now -- and it's a huge step!

So here's what we are eating this week:

Monday: Korean Beef with rice and grilled cabbage [and carrots for the kids]
Tuesday: Tomato Cream Pasta with homemade garlic bread
Wednesday: Crock Pot Massaman Curry over jasmine rice and peas
Thursday: Spincah Bacon Alfredo French Bread Pizzas
Friday: Out to dinner

Saturday morning, M and I leave bright and early for the airport. We had a direct flight to Fort Lauderdale, a private shuttle to the docks in Miami, and then we set sail. Sunday we are out at sea all day -- and hopefully enjoying a nice couples' massage, among many other things. Who knows what we will be eating -- but I do plan to keep it healthy, while also enjoying. There is no need to be a glutton just for the sake of it, you know?!
