Menu Planning Monday

This week, I'm linking up with Elizabeth and Jane for a brand new Monday link-up: Menu Planning Mondays! We've been in a bit of a rut lately when it comes to dinner at our house. We have a few go-to meals and just fill in the rest of the week with the same old meats, prepared with a different sauce. It's getting boring.

So I needed to find a way to spice it up ... what better way then sharing what we are eating, and getting inspiration from everyone else linking up! What better way to find new recipes than from friends?!

So here's our plan for this week:

Monday: Shredded Chicken Tacos
Pretty straight forward. Just cooking some chicken in taco seasoning, shredding it up and using flour tortillas, shredded lettuce, tomatoes, the whole works.

Wednesday: Quiche Lorraine

Thursday: Steak and Onions w/ Honey Roasted Potatoes

Friday: Pizza [Takeout]

Saturday: My Mom's Sticky Chicken
It's pretty much a sauce made from apricot preserves, Lipton's onion soup mix and French dressing. I know, I know ... it sounds completely gross when you put it that way. But it makes this sweet and tangy sauce that really thickens up when you cook it, and it literally sticks to the chicken. I'm going to do some drumsticks. And probably serve it up with rice and a veggie.

So what are you eating this week? Head on over to see who else is linking up this week, as well!

  1. I love that all of the meal plans that I've checked out so far(mine included) have corned beef for Sunday! (:

    1. It's probably the one time of year we buy and make corned beef, since it can be a little pricey!

    1. Those burgers -- I know, right?! I bought extra jalapenos too, so I could make some bacon wrapped peppers a la Pioneer woman! Yum! But I'll email you the recipe for the chicken. Maybe if I can get a picture or two of it this weekend before we eat it all up, I'll post it here later!
